Another one for my avo lovers! This is one of my go-to's for any day of the week. It's quick, easy, delicious, and will have you feeling full for hours :)
Low Carb Avocado Toast
Serves: 1// Prep time: 15 minutes
INGREDIENTS
2 slices Keto Bread
2 eggs, poached
For the avo smash:
1 medium avo
1 clove of garlic, minced
1 slice of lemon or lime
salt and pepper to taste
For the tomatoes:
1/2 cup cherry tomatoes, halved
1 small clove of garlic, minced
1tbsp olive oil
1 tsp balsamic vinegar
Finely chopped basil
Salt and pepper to taste
INSTRUCTIONS
While your water for your eggs is boiling, prepare the following:
Tomatoes
Combine all of the ingredients in a bowl, stir, then put aside.
While your eggs are poaching, prepare the following:
Avo Smash
In a bowl, combine all of the ingredients and smash with a fork.
Toast your bread to your liking, then top with the smashed avo, poached eggs, and tomatoes.
Enjoy hot!
