If you're looking for a light, refreshing meal, look no further. Spiralized zucchini, a quick and easy avocado pesto, and hemp seeds come together to make your taste buds happy :)
Zucchini Pesto Pasta
Serves: 2 // Serving Size: 1cup // Prep time: 15 Minutes
INGREDIENTS
3 medium zucchini, spiralized
1/2 avocado
1/2 cup basil leaves
2 cloves of garlic
1/2 tsp salt
3 tbsp extra virgin olive oil
3 tbsp hemp seeds
cracked black pepper
INSTRUCTIONS
Place spiralized zucchini in a cloth towel for a few minutes to soak up moisture.
In the meantime, combine the rest of your ingredients, except for the 1tbsp of olive oil and hemp seeds, in a blender or food processor. Pulse until thoroughly combined.
Warm your remaining 1tbsp of olive oil in a pan. Add your zucchini noodles for 2-4 minutes.
Stir in your pesto, top with hemp seeds, and enjoy!
