I am a huge cookie lover. The issue? Cookie dough doesn't usually survive long enough for the cookies to be made. If you're anything like me, as soon as the ingredients are out, you're already salivating. By the time the cookie dough is mixed, it's over because there is no way you're going to wait for the cookies to bake before dipping in. This recipe is for you. Pre-rolled cookie dough balls, just waiting for you to dig in!
Healthy "Chocolate Chip" Cookie Dough Balls
Serves: 2 // Serving Size: 2 balls, ~47g // Prep time: 10 min
INGREDIENTS
Dry:
1/2 Cup Almond Flour
2 Tbsp Coconut Flour
1 Tbsp Cacao Nibs
1/4 Tsp Cinnamon
Wet:
2 Tbsp Extra Virgin Coconut Oil
1/2 Tsp Vanilla Extract
~ 1 Tsp Coconut Milk (May need a little more or a little less depending on the absorption of the ingredients)
INSTRUCTIONS
1. Combine all of the dry ingredients in a small bowl.
2. Add coconut oil, vanilla extract, and 1 tsp Coconut Milk. Mix well, until a dough-like texture starts to form.
3. Roll into balls. If the mixture is not sticking together, add a little bit more coconut milk, 1/4 tsp at a time.
4. Enjoy!
Store in a sealed container in the refrigerator for up to 2 weeks.
