Cauliflower Crust Pizza

When someone says pizza crust, the last thing you'd probably think of is cauliflower. We're here to tell you - think again. The days where flour was a kitchen essential are long gone. Its time to grab a cauliflower, work some magic, and create the healthy pizza crust of your dreams! Get creative, play around with toppings, and this recipe will soon become a weekly staple.

Cauliflower Crust Pizza

Serves: 2 // Serving Size: 1/2 pizza // Prep time: 45 Minutes

INGREDIENTS

For The Crust:

1.5 cups cauliflower rice

1 tbsp evoo

2 cloves garlic, minced

1 tbsp chia

1 tbsp flax

3 tbsp water

3 tbsp almond flour

1 tsp evoo

1 egg

1/2 tsp salt

1/2 tsp pepper

Toppings:

2 tbsp tomato sauce

2 button mushrooms, sliced

1/2 cup fennel, sliced

3 tbsp pesto

Garnishes:

Avocado, sliced

1 tbsp walnuts

INSTRUCTIONS

Prepare the crust:

Preheat oven to 350 degrees Fahrenheit. In a pan, combine your cauliflower rice, minced garlic, and olive oil. Sauté for 5 min over med heat.

Remove your cauliflower from the heat and place in a cheesecloth or clean kitchen towel. Set aside and allow it to cool for a few minutes.

In the meantime, grind your chia and flax seeds in a high power blender or food processor until no large pieces remain. Add the water and allow to soak for at least 10 minutes.

Once your cauliflower has cooled, squeeze the cheesecloth over the sink. Try to get as much moisture out as possible.

Transfer your cauliflower rice and chia/flax mixture to a bowl. Add almond flour, olive oil, egg, salt, and pepper. Mix until uniform.

Line a baking sheet or pizza stone with parchment paper. Spread your cauliflower dough onto the parchment paper either with your fingers or using a rolling pin over a second sheet of parchment paper. Shape the edges.

Bake for 20 minutes, until the center is no longer soft.

Prepare your toppings:

While your crust bakes, prepare your toppings.

Remove the crust from the oven after 20 min and spread tomato sauce, pesto, button mushrooms, and fennel over it.

To Finish:

Place back in the oven for an additional 5-8 minutes, until toppings are cooked and the edges are golden brown. 10. Top with avocado and walnuts.

Serve warm and enjoy!
